1. Crispy BBQ Ribs

Prime rib deserves to be taken seriously. If you can afford it, opt for Aubrac or Galicia beef, which comes from northern Spain. If you like the strong flavor of meat, choose mature meat. So once you have the right barbecue in hand, here are the steps to follow.

Remove rib from cold two hours before cooking. If it’s too cold, you’ll go into heat shock which will contract the meat.
Heat the barbecue grill by lowering it as close to the coals as possible and allowing the temperature to rise.
Meanwhile, massage the meat with a little fat. And once the grill is very hot (or the griddle), we place the piece of meat on top.
All this preparation is aimed at provoking Mailard’s reaction. This creates a crust on the sides of the meat, making it crispy on the outside and tender on the inside.
Cook for about 4 minutes on each side, without piercing the meat.
For the end of cooking, leave 5 minutes on each side for a one kilo piece of meat (raise the grill a little), 7 minutes for lightly grilled meats and 10 minutes for medium meats. Finally, some people I like to rest the meat an additional 5-6 minutes in foil so the juices spread throughout the surface. Then season with coarse salt and enjoy.

Summer offers a wide variety of vegetables, whose flavor is already very real, simply grilled with a drizzle of olive oil. But you can also add a marinade to it. To do this, simply crush some garlic and mix it with an equal amount of olive oil and lemon juice. Add some chopped basil.
Pour some of the marinade over the zucchini slices, peppers and aubergines. Cover and let rest in the fridge for about an hour.
Then, when the barbecue is hot, grill for about two minutes on each side, depending on the thickness of the slices. Baste regularly with the rest of the marinade.
Serve hot with barbecue meat or as is. This recipe can also be presented in the form of colorful and equally appetizing vegetable skewers.
3. Special BBQ Summer Fruit Skewers
Once again, summer fruits are endless fun. fresh, naturally candy and soaked, they’re a natural delight, but nothing stops you from being a little more sophisticated. The fruits can also be transformed into a delicacy using a marinade to enhance the flavor and, above all, for the perfumes after grilling.
To succeed in your recipe use honey, a little rum, brown sugar, butter melted and, for those who like it, a touch of cardamom. Pineapple, plantain, peach, apricot or strawberries are ideal. Thread them onto skewers and brush them with the marinade before lightly grilling them. A scoop of ice cream is the perfect accompaniment to this dessert.
